(From The Ultimate Reset,  

2 Cups cooked Quinoa

2 tomatoes, diced

2 medium Cucumbers, peeled and diced

½ Cup pitted Kalamata Olives, chopped

½ Cup fresh Parsley, chopped finely

¼ Cup Fresh Mint Leaves, chopped finely

¼ Cup Extra Virgin Olive Oil

¼ cup Fresh Lemon Juice

½  tsp Himalayan Salt

  1. Add quinoa, diced tomatoes, diced cucumbers, chopped olives, parsley and mint to a large bowl and mix well.
  2. In a separate bowl, mix olive oil, lemon juice and salt. Pour the dressing on the quinoa and vegetables and mix well.
  3. Refrigerate for at least 2 hours before eating.

Serves 4

To serve just 1 person, you will need: ½ Cup quinoa, ½ tomato, ½ medium cucumber, 2 Tbsp Kalamata olives, 2 Tbsp Parsley, 1 Tbsp Mint Leaves, 1 Tbsp Extra Virgin Olive Oil, 1 Tbsp Fresh Lemon Juice, Dash of salt
